The Simplest Cheesecake in the World!



I made this cheesecake yesterday to round out our celebratory meal. My daughter and her sweet husband are here!!! We celebrated with chicken and dressing, and grilled corn on the cob and squash from our garden and cheesecake with blueberry sauce. Yum, my mouth is watering just thinking about it!

The cheesecake is so simple to make but it tastes so good. I made the crust from the recipe on the graham cracker box.






Then I made the cheesecake filling by putting a softened 8 ounce block of cream cheese, a 15 ounce can of Sweetened Condensed Milk and 1/3 cup of lemon juice in a mixing bowl and beating until smooth. I then smoothed it into the crust. I popped it into the frig to chill while I ran out in the yard and....



...picked fresh blueberries from my front yard bushes...



...which I combined with a little sugar and a dash of cornstarch to make it into a blueberry sauce and WALAA! A smooth, rich, delicious dessert to share with my precious family!

    What are you doing to me? First I have got to make the apple butter, I get those great directions and now you've made cheesecake. Oh my DH is going to love you. My grocery list is growing, and as I can't get out of the house for a whole week again, extended by my doctor this morning, I guess dear husband is going shopping. Oh what fun he is going to have. He can not tell you what aisle anything is on, I have always done the shopping for 35 years now. He only makes ice runs.

    Well how I wish I had fresh blue berries in my front yard. These looks so delish Sherry sweetie. You are one lucky gal. I am going to try this recipe, but may be using strawberries or cherries, that is all that I have available here at the house. I will let you know how I do.
